Рецепт рисовой браги с использованием дрожжей Кодзи Ангел

Всем хорошего дня и прекрасного настроения! Сегодня будем готовить Рисовую водку на Кодзи Ангел. Нам понадобится 10кг риса, 40 литров воды и 80гр(8гр на 1 кг риса) дрожжей Кодзи Ангел (если нет весов, то можно взять 8 столовых ложек, без горки). Кипятим 20 литров воды, и заливаем 10кг риса, тщательно размешиваем и оставляем на несколько часов разбухать, потом до охлаждаем до 30-35 градусов с помощью оставшимися 20 литрами холодной воды. После охлаждения, зачёрпываем пол литра из бродильной ёмкости, засыпаем 80гр. кодзи, тщательно перемешиваем и оставляем на 15-30 минут разбродится.

Рисовую кашу ещё раз перемешиваем рукой и раздавливаем все комки: в общем доводим рис до состояния клейстера. Вносим ожившие Кодзи, ставим под гидрозатвор(или под резиновую перчатку) Первые дня 3-4 перемешиваем брагу. Брага, при такой постановке, выбраживает за 12 суток. Пахнет готовая брага приятно - запах из далёкого детства, преобладают нотки сладкой рисовой кашки на молоке ... даже больше похож на кашу (дружба) - рис, пшено, ячневая, ну и перебивает весть этот чудесный купаж - спиртовой запах. На вкус брага похожа на светлое выдохшееся пиво: пресновато горьковатая, но приятная и пощипывает язык, Спирт сырец(напиток одной перегонки)практически ни чем не пахнет: еле уловимый запах свежеиспечённого пирога, а окончание запаха чётко отдаёт рисовой кашей. После второй дробной(разделяем на головные и хвостовые фракции), получаем 3.2литра 93% дистиллята, с приятно сладковатым вкусом.

Внимание: первые 1-2 дня брожения, может появится, неприятный запах (самое активное время ферментации и зависит от качества самой крупы), последующие дни запах уходит.
