@cafe_sarkand: Фруктовые дрожжи: Вам потребуется горсть изюма 50 грамм, 1 яблоко среднего размера, 2 ст.л. сахара и банка 0,5 л. Яблоко и изюм, ни в коем случае нельзя мыть, так как на шкурке фруктов находятся природные дрожжи,которые и будут бродить. Ложем в банку горсть изюма, нарезанное кубиками яблоко и 2 ст.л. сахара, наливаем в банку теплой воды,можно из под крана,недоливая около 3 см до края, для того,чтобы дрожжам было где "гулять". Накрываем банку крышкой, ставим её в теплое,темное место,можно в шкаф, на 5 дней. На второй день добавьте 1 ст л сахара,перемешать для равномерного брожения. На 6 день процедить через сито, все видимые глазу ингредиенты выбросить, а жидкость и осадок оставить-это и есть фруктовые дрожжи. Далее они хранятся в холодильнике. Когда дрожжи будут у вас готовы их можно применять в приготовлении хлеба,блинов,браги, главное,доводить их до нужного объема,подкармливая их ржаной мукой и сахаром. Чем чаще вы их кормите, тем быстрее они у вас растут и требуют больше места. Для приготовления квасного хлеба дрожжи нужно будет "покормить".Перелейте дрожжи в литровую банку и насыпьте туда 10 ст.л.с горкой ржаной муки,2 ст.л. сахара и налейте туда теплой воды 150 мл. Размешаете все равномерно венчиком, поставьте в теплое место. Они будут готовы к использованию, когда устроят "пенную вечеринку" в банке. После каждого использования дрожжей, процедуру кормления нужно повторять, но в пропорции 5 ст л ржаной муки,1 ст л сахара и тёплая вода, все до густоты сметаны.
